Philosopher Crab Alfredo

A delicious pasta dish year round. Enjoy with crab, clams or make it a vegetarian recipe. But we recommend some good California Sheep Cheese!

Yields 4 servings


  • 1# ounces dried Penne Pasta, cooked according to directions
  • 1/4 cup plus 2 tablespoons sweet cream butter
  • 4 cloves garlic, minced
  • 1/4 cup all-purpose flour
  • Kosher salt and fresh ground pepper to taste
  • 1/2 teaspoon chili flakes
  • 2 cups whipping cream
  • 1 cup Ewetopia Philosopher, crumbled
  • 1/2 cup grated Fiscalini Cheddar, grated
  • 16 ounces crabmeat, flaked


  1. Prepare Pasta according to directions. Drain and toss with 2 tablespoons melted butter. Keep warm and covered.
  2. Meanwhile, melt 1/4 cup butter in a large saucepan over medium heat. Add the minced garlic and cook until garlic is golden, whisk in the four, salt, pepper and chili flakes.
  3. Reduce heat, and cook, stirring constantly for about 2 minutes. Add the cream and stir over medium heat until slightly thickened, approximately 3 minutes.
  4. Add in Philosopher and Cheddar cheese to the sauce and stir until cheeses melt and mixture is smooth. Mix in the crabmeat and continue cooking until crabmeat is heated through, about 3 minutes. Taste and adjust seasoning.
  5. Toss Penne Pasta with Alfredo and sprinkle in prepared crab.
  6. Gently fold together, serve warm with fresh bread, a glass of Sauvignon Blank or Golden Ale.
